Hello,
 when I want to modify my pages (home page example) I don't have all the same editor and the same options as in your tutorials. 
Should I download Gutenberg? Because when I download it, I get an error message telling me to delete it.

You are using the classic editor plugin, or a really old version of WordPress. You would want to update your site and remove the classic editor plugin. If your WordPress site is updated you do not need the Gutenberg plugin, because it is already integrated with wordpress.

My wordpress site is up to date, the problem does not come from here. So how remove the classic editor plugin?

Yes, then it should match what we show when editing pages. The tutorials are using the latest WordPress without reverting to the classic version.

If you go to Plugins > Installed > you should be able to find it and deactivate
