How do you change the ‘Portfolio’ slug?

You can’t. That template relies on the Portfolio Post Type plugin. So if you change the portfolio archive, it will not work like it is designed to. To get a similar effect, with a different slug, you could use a different portfolio plugin that has the filter feature.
