When I add a block with wording and a picture. it doesn’t fit in the page format, Please see the first attached pic.
I have tried switching the block between Wide and Full width but neither work (or they both are way off the corner of the post.
I have also tried switching the template from Default Template to Gutenberg template and the Gutenberg one does make the box fit, but the background color is not white, as it was with the default, so I can’t use it. What can I do to fix this?

Right now in the image above it looks correct on wide, with the white background.  It will not change the interior white content area width.  Is that the one that you are trying to adjust?  Or is that you just want the block in the white area?  If so, selecting the normal width should do it.  If that is not it, or it is not working, we can make this private and take a look.

I am trying to adjust the grey block that has two sections, the text and the photo. It’s going over the sides of the white box that contains the main text of the blog (on default template).

I don’t want to use the Gutenberg template because it makes the background of the blog colored instead of a distinct white box. I really hope that helps make it more clear.

Then you would select the normal width and not change it to wide. It will stay in the white content area.
