Hello,
I am using the custom blog (Hello Rosette) and everything is working fine except for the “view more posts” link. When you hover over it, it does read page/2. However, it loads the exact same blog posts and did not actually provide content for previous blog posts. Do you know why this might be the case?

Under Settings > Reading > do you have your plain or normal blog page assigned as your blog page? If not, that page 2 doesn’t know what archive to go to. Once you set the normal blog it should be fixed.

If you have that blog page set and it is not working, then you will want to make sure that the link on view More is going to the correct page 2 spot on your blog archive.

When I set "Posts Page" to "Blog", I lose my custom blog page. How do I keep the custom blog page but still be able to display more blog posts?

Your custom blog page, and blog page are (should be) two different pages. Custom blog page is a stand alone custom page you can edit. The blog page is not editable and what wordpress uses for your blog archive to show all your posts.
