How to create multiple navigation menus?

I want that some of the pages on my website display a DIFFERENT navigation menu (=header) than my homepage and other main pages.
How do I create a separate navigation menu (header)? And how I indicate in those specific pages that they are supposed to use this different menu (versus the main menu/header)?
