I Can’t change the header of hello beaches and the menu is not displaying as I created

Hello,
I’m editing all the wordpress pages from my tablet and I Can’t change anything on the header of hello beaches, also the menu is not displaying as I created.
When I activate the header and I go to see page I can see the header but when I’m editing I don’t see it. I had to make a provisional header with the name of the page, but here I’m not able to add any menu or other things.
The problem with the menu is I already created my new categories in appearance but I don’t see them in the menu button, I only see the menu created by hellobeaches.

On a tablet you are using a mobile menu. To see the menu items you would click the hamburger in the top right. To edit that menu you would go to Appearance > Menus > and either create or select the mobile menu from the dropdown of menus. Then save that menu to the mobile spot.
When you are in the page editor, you will not see the logo and menu. The page editor on WordPress will only show you what is on the page. If you want to edit the logo and menu, those are in the customizer.
