My categories are highlighted yellow, is there a way to not have them highlighted like the demo shop?

What is your URL?  This is from the Woocommerce mark.  I can give you code to change the color, or totally remove it.  Which would you prefer?

You can add this to your Additional CSS in the customizer

.woocommerce mark {
background: transparent !important;
}
