I can’t figure out how to do anything on the blog pages anything I do on my blog page as soon as I hit preview in new tab it’s nowhere to be found so I would love some help on figuring out how to do blog posts.

What is your URL? The blog is a default blog roll and will auto pull your posts to it. The custom blog is a page that should not be assigned to your blog page in settings. That one you can create how you would like and it is not auto turned into an archive.
