I’d love to use the Featured Content area to feature certain pages on my site rather than the most recent posts. Is that possible? 

If not, could I feature only posts with a certain tag or category setting?

Not with the way the theme is currently designed.  It is coded to only pick up the latest posts.  A better option would be to use or add a widget area (depending on the theme), and featured the pages in that spot.  Then you could hide the homepage posts if you do not want them to show.
